Turn, flight and parabola separate a genuine spinner from an ordinary one

Rajinder Goel, Padmakar Shivalkar and V V Kumar, three spinners who traumatised batsmen from the 1960s to the late-1980s, will be honoured by the BCCI on March 8 for their services to Indian cricket. Goel and Shivalkar, both left-arm spinners, will be given the CK Nayudu Lifetime Achievement Award. Kumar, a legspinner who played two Tests for India, will be given a special award for his "yeoman" service

In the following interview, the three talk about learning the basics of spin, their favourite practitioners of the art, and what has changed since their time.


What makes a good spinner?

Rajinder Goel -  Hard work, practice, and some intellect on how to play the batsman - these are mandatory. Without practice you will not be able to master line and length, which are key to defeat the batsman.

Padmakar Shivalkar  - Your basics of line and length need to be in place. The delivery needs to have a loop. This loop, which we used to call flight, needs to be a constant. Over the years, you increase this loop, adjust it. You lock the batsman first and then spread the web - he gets trapped steadily. But these things are not learned easily. It takes years and years of work before you reach the top level.

VV Kumar - There are many components involved. A spinner has to spend a lot of time in the nets. You can possibly become a spinner by participating in a practice session for a couple of hours. But you cannot become a real good spinner. A spinner must first understand what exactly is spinning the ball. A real spinner should possess the following qualities, otherwise he can only be termed a roller.

The number one thing is to have revolutions on the ball. Then you overspin your off- or legbreaks. There are two types when it comes to imparting spin: overspin and sidespin. A ball that is sidespun is mostly delivered with an improper action and is against the fundamentals of spin bowling. A real spinner will overspin his off- or legbreak, which, when it hits the ground, will have bounce, a lot of drift and turn. A sidespun delivery will only break - it will take a deviation. An overspun delivery will spin, bounce and then turn in or away sharply.

Then we come to control. The spinner needs to have control over the flight, the parabola. Flight does not mean just throwing the ball in the air. Flight means you spin the ball in such a way that you impart revolutions to the ball with the idea of breaking the ball to exhibit the parabola or dip. By doing that you put the batsman in two minds - whether he should come forward or stay back. But if the flight does not land properly, it can end up in a full toss.

The concept of a good spinner also includes bowling from over the wicket to both the right- and left-handed batsman. The present trend is for spinners to come round the wicket, which is negative and indicates you do not want to get punished. A spin bowler will have to give runs to get a wicket, but he should not gift it.

A spinner is not complete without mastering line and length. He must utilise the field to make the batsman play such strokes that will end up in a catch. That depends on the line he is bowling, his ability to flight the ball, to make the batsman come forward, or spin the ball to such an extent that the batsman probably tries to cut, pull, drive or edge. That is the culmination of a spinner planning and executing the downfall of a good batsman. For all this to happen, all the above fundamentals are compulsory. Did you have a mentor who helped you become a good spinner?

Goel - Lala Amarnath. It was 1957. I was in grade ten. I was part of the all-India schools camp in Chail in Himachal Pradesh. He taught me the basics of spin bowling. The most important thing he taught me was to come across the umpire and bowl from close to the stumps. He said with that kind of action I would be able to use the crease well and could play with the angles and the length easily.

Kumar - I am self-taught, and I say that without any arrogance. I started practising by spinning a golf ball against the wall. It would come back in a different direction. The ten-year-old in me got curious from that day about how that happened. I started reading good books by former players, like Eric Hollies, Clarrie Grimmett and Bill O' Reilly. Of course, my first book was The Art of Cricket by Don Bradman. That is how I equipped myself with the knowledge and put it in practice with a ball in hand.

Shivalkar - It was my whole team at Shivaji Park Gymkhana who made me what I became. If there was a bad ball, and there were many when I was a youngster in 1960-61, I learned a lot from what senior players said, their gestures, their body language. [Vijay] Manjrekar, [Manohar] Hardikar, [Chandrakant] Patankar would tell me: "Shivalkar, watch how he [the batsman] is playing. Tie him up." "Kay kartos? Changli bowling tak [What are you doing? Bowl well]," they would say, at times widening their eyes, at times raising their voice. I would obey that, but I would tell them I was trying to get the batsman out. You cannot always prevail over the batsman, but I cannot ever give up, I would tell myself.


What was your favourite mode of dismissal?

Goel - My strength was to attack the pads. I would maintain the leg-and-middle line. Batsmen who attempted to sweep or tried to play against the spin, I had a good chance of getting them caught in the close-in positions, or even get them bowled. I used to get bat-pad catches frequently, so I would call that my favourite.

Kumar - My best way of getting a batsman out was to make him play forward and lure him to drive. Whether it was a quicker, flighted or flat delivery, I always tried to get the batsman on the front foot. Plenty of my wickets were caught at short leg, fine leg and short extra cover - that shows the batsman was going for the drives. I would not allow him to cut or pull. I would get these wickets through well-spun legbreaks, googlies, offspinners. You have to be very clear about your control and accuracy, otherwise you will be hit all over the place. You should always dominate the batsman. You have to play on his mind. Make him think it is a legbreak and instead he is beaten by flight and dip.

Shivalkar - I used to enjoy getting the batsman stumped. With my command over the loop, batsmen would step out of the crease and get trapped, beaten and stumped.


Tell us about one of your most prized wickets.

Goel - I was playing for State Bank of India against ACC (Associated Cement Companies) in the Moin-ud-Dowlah Gold Cup semi-finals in 1965 in Hyderabad. Polly saab [Polly Umrigar] was playing for ACC. He was a very good player of spin. He was playing well till our captain [Sharad] Diwadkar threw the second new ball to me. I got it to spin immediately and rapped Polly saab on the pads as he attempted to play me on the back foot. It was difficult to force a batsman like him to miss a ball, so it was a wicket I enjoyed taking.

Kumar - Let me talk about the wicket I did not get but one I cherish to this day. I was part of the South Zone team playing against the West Indians in January 1959 at Central College Ground in Bangalore. Garry Sobers came in to bat after I had got Conrad Hunte. I was thrilled and nervous to bowl to the best batsman. Gopi [CD Gopinath] told me to bowl as if I was bowling in any domestic match and not get bothered by the gifted fellow called Sobers.

The first ball was a legbreak, pitched outside off stump. Sobers moved across to pull me. Second ball was a topspinner, a full-length ball on the off stump. He went on the leg side and pushed it past point for four. The third ball was quickish, which he defended. Next, I delivered a googly on the middle stump. Garry came outside to drive, but the ball took the parabola and dipped. He checked his stroke and in the process sent me a simple, straightforward return catch. The ball jumped out of my hands. I put my hands on my head.

Who was the best spinner you saw bowl?

Goel - There is no better spinner than Bishan Singh Bedi. His high-arm action, the control he had over the ball, the way he would outguess a batsman - I loved Bedi's bowling. I was in awe of the flight he could impart on the ball. In contrast, I was rapid. Bedi was good on good pitches.

Kumar- I will call him my idol. I have not seen anybody else like Subhash Gupte, a brilliant legspinner. I have never seen anybody else reach his standards, including Shane Warne. Sobers himself said he was the best spinner he had ever played. In those days he operated on pitches that were absolutely dead tracks. It was Gupte's ability to adjust and adapt on any kind of surface, his perseverance and the variety he had - my goodness, no one came near to him! That is why he is the greatest spinner I have seen.


Who was the best player of spin you bowled against?

Goel - Ramesh Saxena [Delhi and Bihar] and Vijay Bhosle [Bombay] were two good players of spin. Saxena would never allow the ball to spin. He would reach out to kill the spin. Bhosle was similar, and used to be aggressive against spin.

Kumar - Vijay Manjrekar was probably the best player of spin I encountered. What made him great was the time he had at his disposal to play the ball so late. And by doing that he made the spinner look mediocre.

Shivalkar - [Gundappa] Viswanath. He could change his shot at the last moment. Once, I remember I thought I had him. He was getting ready to cut me on the off stump, but the ball dipped and turned into him. I nearly said "Oooh", thinking he would be either lbw or bowled. But Vishy had amazing bat speed and he managed to get the bat down and the edge whisked past fine leg. He ran two and then looked at me and smiled. He had a sharp eye. [Vijay] Manjrekar called him an artist. Vishy was a jaadugar [magician].


What has changed in spin bowling since the emergence of T20?


Goel - Earlier, we would flight the ball and not get bothered even if we got hit for four. We used to think of getting the batsman out. Now spinners think about arresting the runs. That is one big difference, which is an influence of T20.

Kumar - The three fundamentals I mentioned earlier do not exist in T20 cricket. Spinners are trying to bowl quick and waiting for the batsman to make the mistake. The spinner is not trying to make the batsman commit a mistake by sticking to the fundamentals. In four overs you cannot plan and execute.

Shivalkar - They have become defensive. No one offers the loop anymore. The difference has been brought upon by the bowlers themselves. A consistent loop will always check the batsmen, in T20 too, and also get them out. But you have to be deceptive. At times you should deliver from behind the popping crease, but you cannot allow the batsmen to guess that. That allows you more time for the delivery to land, for your flight to dip. The batsman is put in a fix. I have trapped batsmen that way.

We were playing for Tatas against Indian Oil [Corporation] in the Times Shield. Dilip Vengsarkar was standing at short extra cover. One batsman stepped out, trying to drive me, but Dilip took an easy catch. A couple of overs later he took another catch at the same spot. A third batsman departed in similar fashion in quick succession. Then a lower-order batsman played straight to Dilip, who dropped the catch as he was laughing at the ease with which I was getting the wickets. "Paddy, in my life I have never taken such easy catches," Dilip said, chuckling. The batsmen were not aware I was bowling from behind the crease. If they had noticed, they might have blocked it.


What is the one thing you cannot teach a spinner?

Goel-  Practice. Line, length and control can only be gained through a lot of hard practice. No one can teach that. Spin bowling is a natural talent. Every ball you have to think as a spinner - what you bowl, how you try and counter the strength or weakness of a batsman, read his reactions, whether he plays flight well and then I need to increase my pace, and such things. All these subtle things only come through practice.

Kumar - There is no such thing that cannot be taught.

Shivalkar - This game is a play of andaaz [style]. That andaaz can only be learned with experience.


What are the things that every spinner needs to have in his toolkit?

Goel - Firstly, you have to check where the batsman plays well, so you don't pitch it in his area. Don't feed to his strengths. You have to guess this quickly.

Kumar - A spinner should understand what line and length is before going into a match.

Shivalkar- You have to decide that on your own. What I have, what can I do are things only a spinner needs to understand on his own. For example, a batsman cuts me. Next time he tries, I push the ball in fast, getting him caught at the wicket or bowled.


What is beautiful about spin bowling?

Goel - When the ball takes a lot of turn and then goes on to beat the bat - it is beautiful.

Kumar - A spinner has a lot of tools to befuddle the batsman with and be a nuisance to him at all times. He has plenty in his repertoire, which make him satisfying to watch as well as make spin bowling a spectacle.

Shivalkar - When you get your loop right, the best batsman gets trapped. You take satisfaction from the fact that the ball might have dipped, pitched, taken the turn, and then, probably, turned in or out to beat the batsman. You can then say "Wah". You have Vishy facing you. You assess what he is doing and accordingly set the trap.

The Five Best Ever Spinners according to Ashley Mallett

Shane Warne's star illuminated the cricket firmament, inspiring generations with the majesty of his art. When Warne reigned supreme on the Test stage, you'd see kids in the park and in the nets trying to emulate him. They got the saunter right, but what they didn't see was Warne's amazing strength, drive and energy through the crease. Watching him, it all looked so easy. They would emulate his approach, release the ball, and more times than not watch it disappear out of the park. There was a general lack of understanding about energy and drive through the crease. 

Warne turned up just when we all thought legspin had gone the way of the dinosaurs, who were bounced out when Earth failed to duck a hail of meteors. Sir Donald Bradman said Warne's legspin was the best thing to happen to Australian cricket in more than 30 years. I, along with thousands of television viewers, watched transfixed as Warne weaved his magic. Poor Mike Gatting, poor, hapless Daryll Cullinan.

I was in the South African dressing room when Warne destroyed them with 6 for 34 in their second innings at the SCG in 1998. And we all remember the time he got seven wickets for 50-odd at the MCG against West Indies, getting Richie Richardson with a flipper. Before that grand performance, which sparked his career, the camera focused on Warne in the field, and Bill Lawry said on air: "Now there's a young man who won't get much bowling today." The Phantom was right: Warne bowled 23 overs; not a lot of work for a slow bowler, but that was all he had to get seven wickets.

Warne's genius got him 708 wickets in 145 Tests. His physical skills were matched by an incredibly strong mind. He was frequently in a lot of controversy off the cricket field, but he managed to focus totally on his cricket when it mattered on the field of play. As with Don Bradman and Garry Sobers, he was a cricketing phenomenon.

The Indian offspinner Erapalli Prasanna was a small, rotund chap, with little hands and stubby fingers. Not the size of hand you'd think would be able to give a cricket ball tremendous purchase.
Pras, as he was affectionately called, bounced up to the wicket and got very side-on. He was short, so he tended to toss the ball up, and he spun it so hard it hummed. Unlike the majority of spinners, he could entice you forward with tantalising flight or force you back, and often got a batsman trapped on the crease. His changes of pace weren't always as subtle as Warne's, but Pras broke the rhythm of batsmen better than any spinner I've seen - especially with that quicker ball, which perplexed the best players of spin bowling in his era.

He possessed a mesmerising quality in that he seemed to have the ball on a string. You'd play forward and find yourself way short of where you expected the ball to pitch. In Madras once, I thought I'd take him on and advanced down the wicket only, to my horror, find that Pras had pulled hard on the "string" and I was miles short of where the ball pitched. I turned, expecting to see Farokh Engineer remove the bails, only to see the ball, having hit a pothole, climb over the keeper's head for four byes.

Pras was one of the few spinners to worry the life out of Ian Chappell, for he could trap him on the crease or lure him forward at will. Doug Walters, on the other hand, played the offspinners better than most - perhaps because his bat came down at an angle and the more you spun it, the more likely it was to hit the middle of his bat.

In 49 Tests Prasanna took 189 wickets at an average of 30.38. For a spinner who played a lot on the turning tracks of India, his average is fairly tall, but Pras was a wicket-taker and he took risks, inviting the batsman to hit him into the outfield. He always believed that if the batsman was taking him on and trying to hit him while he was spinning hard, dipping and curving the ball, he would have the final word.

For his tremendous performances in Australia in 1967-68, I place Prasanna if not above, at least on par with another genius offspinner, the Sri Lankan wizard Muttiah Muralitharan.

Murali's Test figures beggar belief - 133 matches for 800 wickets at 22.72, with 67 bags of five wickets or more (though, for some reason, he didn't shine in Australia).

He operated from very wide on the crease - which would inhibit the ordinary offie - but got so much work on the ball and a tremendous breadth of turn that he got away with bowling from that huge angle. At times he operated from round the wicket to get an away drift. Murali had the doosra, which fooled most batsmen, although the smart ones knew that his offbreak was almost certainly going to be a fair way outside the line of off stump to a right-hander and that the doosra would come on a much straighter line.

Saqlain Mushtaq lost his way over the doosra, the delivery he created, because he ended up bowling everything on too straight a line, and thus his offbreak became far less effective at the end of the career than it was when he began.

As with Saqlain and Warne, Murali made good use of his front foot. When any spinner gets his full body weight over his braced front leg at the point of release, he achieves maximum revolutions.

As a youngster Murali attended the famous St Anthony's College in Kandy, and every Sunday morning he trained under the tutelage of Sunil Fernando. Ruwan Kalpage, who also trained under Fernando at the time, and is the current Sri Lankan fielding coach, maintains that Murali always had the same action that he took into big cricket.

As with Warne, when bowling, Murali had an extraordinary area of danger, as big an area as your average dinner table. The likes of Ashley Giles, say, on the other hand, who didn't spin the ball very hard, needed to be super accurate, for their area of danger was about as a big as a dinner plate in contrast.

The key to spin bowling is not where the ball lands but how the ball arrives to the batsman. As with Warne and Prasanna, when Murali bowled, the ball came with a whirring noise and after striking the pitch rose with venom. Throughout his career and beyond there has been that nagging doubt about the legitimacy of Murali's action, but the ICC has cleared him and that is why I place him among the best five spinners I've seen.

My No. 4 is Derek Underwood, the England left-arm bowler, who has to be categorised as a spinner, although he operated at about slow-medium and cut the ball rather than spun it in the conventional left-arm orthodox manner. On good wickets Lock was a superior bowler to Underwood, but on underprepared or rain-affected wickets, the man from Kent was lethal.

He had a lengthy approach, a brisk ten or so paces, with a rather old-fashioned duck-like gait, and a hunter's attitude, along with a keen eye for a batsman's weakness. In August 1968, Underwood demolished Bill Lawry's Australian team on the last day of the fifth Test. Heavy rain gave the Australians hope of escaping with a draw and so winning the series 1-0. But Underwood swooped after tea and cut them down, taking 7 for 50.

A week later he joined John Inverarity, Greg Chappell (who had just completed a season with Somerset) and me on Frank Russell's Cricketers Club of London tour of West Germany. We stayed in a British Army camp just outside the old city of Mönchengladbach. We played a cricket match against the army, using an artificial pitch and welded steel uprights doubled for stumps.

A huge West Indian came to the crease and we pleaded with Deadly to "throw one up". Having faced him over five Tests in England, where his slower ball was about the speed of Basil D'Oliveira's medium-pacers, we were keen to see how the batsman - any batsman - would react, when Underwood gave the ball some air. He eventually did. As the ball left his hand we could see a hint of a smile on the batsman's face. The ball disappeared and was never retrieved. Underwood's face was a flush of red as he let the next ball go, and what a clang it made as it hit those steel uprights, while the West Indian's bat was still on the downswing!

Apart from his destructive ability on bad or rain-affected tracks, Underwood was also a brilliant foil for the fast bowlers on hard wickets. He kept things tight as a drum when bowing in tandem with John Snow during Ray Illingworth's successful 1970-71 Ashes campaign Down Under.

My fifth choice might surprise some for I've gone for Graeme Swann, the best of the modern torchbearers for spin bowling.

I first saw him with Gareth Batty and Monty Panesar, fellow spin hopefuls, in Adelaide in the early 2000s. Swann had energy through the crease, he spun hard, and he tried to get people out. At that time some of the coaches leaned towards Panesar and I couldn't understand it, for Swann wasn't just a fine offspinner, he could bat when he put his mind to it, and he was an exceptional slip fieldsman. In comparison Panesar did not seem to have the same resolve or the cricketing nous.

When he was finally recognised as a top-flight spinner, Swann proved himself straightaway. He was 29 years old when he played his first Test, against India in 2008-09, and in the four-odd years since, he has played 41 Tests, taking 182 wickets at 27.97. Swann doesn't have the doosra, but he does have the square-spinner, which looks like an offie but skids on straight, and he can beat either side of the right-hander's bat.

There's a cheerful chirpiness about him that may annoy his opponents, but that is part of his make-up, just as the aggression of a Bill O'Reilly, or the cold stare of Warne, helped them dominate batsmen. Statistically Swann's record so far compares well with Jim Laker's (193 wickets at 21.24 from 46 Tests) and Tony Lock (49 Tests - 174 wickets at 25.58 with 9 five-wicket hauls).

There are lots of good spinners who I have had to omit, including Lock, Laker, Abdul Qadir, Lance Gibbs, Richie Benaud, Daniel Vettori, Anil Kumble, Sonny Ramadhin, Intikhab Alam, John Emburey, Pat Pocock, Ray Illingworth, Fred Titmus and Stuart MacGill. But the five I did pick - Warne, Prasanna, Murali, Underwood and Swann - would do well against any batsmen in any era.

Is Hummus a near-sacred foodstuff, or a bland, beige paste with good PR?

Whatever happened to the dip? Once the apogee of sophisticated entertaining in their dinky quartered tubs, these gloopy mixtures – thousand island, cheese and chive, the graveyard of a million splintered Pringles – were quietly dethroned, sometime in the late 1990s, by an invasion from the eastern Mediterranean: salmon pink taramasalata, garlicky tzatziki and, most successful of all, hummus, the colour and texture of wet mortar. Suddenly, the world went beige.
Of course, it wasn't long before we made hummus our own, adding sweet chilli sauce, pesto, sun-dried tomatoes – in fact, the chickpea has good-naturedly absorbed well-nigh every food fad that's gripped the nation over the last decade – but despite its popularity, very few of us actually make our own. Which is a shame, because fresh hummus is a world away from the sour slurry, seasoned with preservatives, and solid enough to retile the bathroom with, sold under the name in many supermarkets – and half the price too.

The beauty of hummus, as far as I'm concerned, is how easy it is to sling together at the last minute from the cupboard – a tin of chickpeas, a spoonful of tahini, some lemon juice and garlic, and you've got the makings of lunch … as well as plenty of time to reflect upon your sins in using such inferior produce, because no true hummus head can abide tins. They're all wrong texturally, apparently, and the flavour … well, according to blogger Helen Graves, they "pong" to boot. Well, that's me told.

Photograph: Felicity Cloake for the Guardian However, in the interests of lazy cooks everywhere, I'm making two identical hummuses from Claudia Roden's recipe in Arabesque – one using dried chickpeas, as she directs, and one with a tin from the cupboard. The dried chickpeas definitely have a nuttier flavour (although, having helped myself to a few, I reject the idea that the others are actively unpleasant), but they also give the hummus a grainier texture. I've obviously been lucky with my tin; according to complaints online, many brands are crunchy and undercooked, whereas the Italian ones sold by my local (Turkish) grocer are fast approaching mushy.
Flavourwise though, I need to trade up, which is where Lebanese food writer Anissa Helou comes in. Although she decries such conveniences in her 2003 book, Lebanese Cuisine ("I do not like the taste or texture of tinned food"), by 2007's Modern Mezze, her attitude has relented: "I used to make hommus the old-fashioned slow way … However, you can now buy jars of excellent ready-cooked chickpeas, preserved in water and salt, without added artificial preservatives".
I find some in my local overpriced organic supermarket, modestly priced at just £2.99 for 425g – but I can at least see the difference. They're double the size of the tinned sort, and the hummus I make with them is buttery and smooth, with what my flatmate describes in a forced blind tasting as a "lovely flavour". If you're going to cheat, do it properly.

Secret (softening) agents

The problem with Roden's chickpeas may well be that, despite lengthy pre-soaking (28 hours, in fact), and four hours of cooking to render them edible, they're just not soft enough. I suspect my local shop, which bills itself as a Mediterranean Supermarket, has quite a high turnover in the dried chickpea department, but the fact remains that, without a pressure cooker, melting softness can be quite difficult to achieve – and it's absolutely vital for good hummus.

Photograph: Felicity Cloake for the Guardian Everyone else, from Anissa Helou to Yotam Ottolenghi, recommends adding a little bicarbonate of soda to the soaking water: this time-honoured trick, according to kitchen chemistry whizz Hervé This, prevents the calcium in my London tapwater from cementing together the pectin molecules in the pea's cell walls – in fact, the alkaline water that it produces actively encourages these pectins to separate, producing a softening effect (I recommend a perusal of This's Kitchen Mysteries for a more coherent scientific explanation).
Ottolenghi uses 1½ tbsp bicarb per 500g dried chickpeas: 1 tbsp in the soaking water, and the rest in the pan. After the same soaking period as Roden's, his chickpeas take a quarter of the time to cook – and achieve that lovely fluffy texture which makes such great hummus. Nigella, meanwhile, who makes a very sensible point about the global conspiracy to pretend chickpeas cook far quicker than they do (see also, risotto), uses a slightly different method, credited to her mentor, Anna del Conte.
She soaks the dried chickpeas in cold water and a mixture of bicarb, flour and salt – the last, according to Harold McGee, speeds the eventual cooking time, but reduces the swelling of starch granules within the beans, giving a "mealy internal texture, rather than a smooth one", but the rationale behind the flour I'm unable to fathom. In any case, Nigella's chickpeas take very slightly longer than Ottolenghi's, and have a slightly grittier texture, so I'll trust the latter on this one.
(Two points to note – too much bicarb can give the chickpeas an unpleasant soapy quality, so always err on the side of caution. It's also been suggested that it robs them of much of their nutritional value, but I couldn't find any data on this, or what effect the alternative, a much lengthier cooking time, has: all information most welcome.)

Photograph: Felicity Cloake for the Guardian While trawling through reams of hummus lore online, I come across Paula Wolfert's claim that, during an assignment on "the best hummus in Israel", she discovered that peeling chickpeas gave a "superior colour and flavour" to the end product. The fact that chickpeas even had skins was news for me, but they're actually very easy to slip off, once the chickpeas are cooked; although given the size of the things, it's a mindless, rhythmic activity for a night in front of the telly. I don't like the texture it gives Roden's recipe though – hummus varies from chunky to silken smooth, and this is too far down the latter road to for my taste; more like a mousse than a dip.
Wolfert also passes on a tip she picked up on her trip: mixing the tahini with lemon juice and garlic until it "tightens up", and then loosening it with cold water before stirring it into the hummus – a move intended to create a lighter, creamier texture. She's right on this one – it makes a subtle, but discernible difference, preventing the clagginess that sometimes dogs this dip.

Flavourings

Although I'm not averse to abusing the chickpea's easy-going nature on occasion (I can particularly recommend the carrot and cardamom hummus from Alice Hart's new book, Vegetarian), here I'm sticking to the time-honoured quartet of chickpeas, tahini, lemon juice and garlic – no peanut butter, Nigella, and no dried mint thank you Elizabeth David.

Photograph: Felicity Cloake for the Guardian Nigella's basic recipe, however, is interesting in that it's lightened with Greek yoghurt – "as far as authenticity goes, I don't make any claims," she admits, but "homemade hummus can be stodgy and claggy, and I love the tender whippedness that you get in restaurant versions". I agree – it adds richness without weight, but after experimenting, I discover a similar texture can be achieved through judicious application of chickpea cooking water.
I don't think you need the olive oil Nigella adds either; I prefer to keep mine as a topping, to be soaked up by the pitta – but one innovation I will be keeping is her pinch of cumin. It's not a standard ingredient, although by no means unknown in the Middle East, but it makes a real difference to the end result.
The balance of garlic and lemon juice is very personal, but I'd stick with the ratio of tahini to chickpea given here: too much of the sesame seed paste gives a sticky, sweet result – I think even Ottolenghi overplays it. As my tester observes, hummus ought to taste of chickpeas.

How to top it

Hummus is, of course, ideal dipping material, but it can also be dressed up into a proper meal – Ottolenghi's recipe in Plenty has it with broad bean paste, hard-boiled eggs and raw onion (not "the lightest affair, but … completely delicious"), while the recipe in the Moro cookbook includes a sweetly spiced topping of minced lamb, caramelised onions and pine nuts, which I urge you to try. Even if you're serving it as a dip, a sprinkling of paprika, or (my own personal favourite), lemony za'tar, sets it well apart from the common supermarket herd.

Photograph: Felicity Cloake for the Guardian Hummus may be simple, but that doesn't mean it's easy – there's an awful lot of disappointing dips out there. Take time to cook the chickpeas properly, and season ever-so-gradually, until the heat of the garlic, and the zing of the lemon suits your particular idea of perfection, and you'll remember just why this unassuming Middle Eastern staple stole our hearts in the first place.
Serves 4
200g dried chickpeas
1½ tsp bicarbonate of soda
6 tbsp tahini
Juice of 1 lemon, or more to taste
3 cloves garlic, crushed, or according to taste
Pinch of cumin
Salt, to taste
Olive oil, to top
Paprika or za'tar, to top (optional)

1. Put the chickpeas in a bowl and cover with twice the volume of cold water. Stir in 1 tsp of bicarbonate of soda and leave to soak for 24 hours.
2. Drain the chickpeas, rinse well and put in a large pan. Cover with cold water and add the rest of the bicarb. Bring to the boil, then turn down the heat and simmer gently until they're tender – they need to be easy to mush, and almost falling apart, which will take between 1 and 4 hours depending on your chickpeas. Add more hot water if they seem to be boiling dry.
3. Leave them to cool in the water, and then drain well, reserving the cooking liquid, and setting aside a spoonful of chickpeas as a garnish. Mix the tahini with half the lemon juice and half the crushed garlic – it should tighten up – then stir in enough cooled cooking liquid to make a loose paste. Add this, and the chickpeas, to a food processor and whizz to make a purée.
4. Add the cumin and a generous pinch of salt, then gradually tip in enough cooking water to give a soft paste – it should just hold its shape, but not be claggy. Taste, and add more lemon juice, garlic or salt according to taste.
5. Tip into a bowl, and when ready to serve, drizzle with olive oil, garnish with the reserved chickpeas and sprinkle with paprika or za'tar if using.
Is hummus a near-sacred foodstuff, or a bland, beige paste with good PR? Will anyone come out in favour of tinned chickpeas – or exotic flavourings? – and please, what on earth should I do with 8 bowls of the stuff?

During practice and in matches I keep trying different ways of spinning the ball. I get wickets but also go for a lot of runs. How do I stick to the basics for the most part? asked Dylan D from China

It is a mental thing. The most important ball is your stock ball: if you are a legspinner it is the legbreak. You bowl it when you need to keep things tight and when you need to take a wicket. By all means work on your variations, but not before you have got reasonable control over your stock ball.

At times I get the ball to spin a lot but then there are times when it just does not turn. What do I do? asked Chad Williams from Belgium

The ball doesn't always react the way you want it to. In the 2005 Ashes Test at Lord's, Shane Warne bowled three legbreaks to Ian Bell, who shouldered arms to first two, as they spun a long way towards slip. The third one hit him in front and he was out lbw. He thought it was a variation ball but it was really a legbreak that did not spin.

Why can't all legspinners bowl the googly? Why do some of them lose their main delivery when they start bowling the wrong 'un? asked Milind from the USA

Because of the wrist position. When you bowl a googly, the back of your hand faces the batsman. The more you do that, the less likely it is for your wrist or palm to face the batsman when you bowl the legbreak. It just creates a bad habit. Most legspinners love the thought of bowling the googly which the batsman may or may not pick. But the trouble is the more you bowl it, the more your wrist gets into a position where it won't support your legbreak.

I know you do not believe in teaching budding offspinners how to bowl the doosra. But what about the away-going delivery as bowled by Erapalli Prasanna? I believe Harbhajan Singh's, and maybe even Jason Krejza's, doosra deliveries are the sort of floaters Prasanna used to bowl? asks Kunal Sharma from Canada

The thing about the doosra is that the people who have bowled it have normally had their actions questioned. Most of the guys don't have the flexibility to bowl that ball. Graeme Swann has shown how excellent an offspinner can be with an orthodox offbreak and an arm ball - a ball that looks like an offbreak but does not spin. Nathan Hauritz got five wickets against Pakistan in Sydney bowling the same way. Just because a delivery reacts different off the pitch does not mean the bowler is bowling the doosra. It can often be just a reaction off the pitch.

I would like to know how to make the ball dip. Also, how does a legspinner understand what is the right pace to bowl at? asks Nipun from Bangladesh

The right pace to bowl at is the pace where you gain your maximum spin. Then you vary your pace from there. But you must understand what pace you need to bowl at. That is very important. Warne gained his maximum spin at around 50mph (80 kph). After that, he got less and less spin. For a young bowler that pace could vary between 35-40mph. So whatever speed it is, be satisfied that you can bowl that ball and gain the maximum spin.

Regarding the dip, it comes from over-spin. When you release the ball, you spin it up and generate a lot of over-spin. For the curve, as opposed to the dip, it is important you align yourself with the target which, say is the middle stump. If you just rotate your wrist 180 degrees, release the ball right to left from you hand, there is a good chance the ball will curve in towards the right-hand batsman. Drop is different from curve.

I have watched your 'Masterclass' videos many times but still find it very difficult to bowl the flipper. I understand the concept of squeezing the ball out, but I haven't been able to grasp the idea of doing it in full motion: the arm movement is anti-clockwise and to "squeeze" the ball out of your fingers is clockwise? asked Akash Sureka from the UK

Again, alignment is very important if you are trying to bowl the flipper. You need to align yourself side-on towards your target, which should be around off stump. Then bowl with your shoulder towards that target, flicking the ball underneath as you release it from your hand. Keeping the seam pretty much upright encourages the ball to curve. Your fingers should be above and below the seam because you are using your thumb, your first and second fingers squeezing the ball underneath your hand. But the bowling shoulder needs to be powerful and also bowling towards the target. There is no anti-clockwise. The hand goes straight towards the target.

How do you think Warne got his amazing confidence, leadership skills and competitive spirit? asked Nadir H from India

I believe he was born with that gift just like he was born with the gift of spin. Warne had a massive heart and showed a lot of courage. You didn't know that the first day you met him. The longer he played, the more certain he became of his own ability and then the competitive spirit came forward.

I once heard Warne's technique should not be imitated by youngsters. Is it because there's pressure on his shoulder or that he doesn't have a run-up, so to speak? asked Nihal Gopinathan from India

This is one question I find annoying because a run-up is only for rhythm. Coaches who encourage people to run in like medium-pacers are not allowing the legspinner to go up and over his front leg. It is important that you bowl over a braced front leg. Warne had eight steps in his approach but walked the last three and had lovely rhythm. People said only Warne was strong enough to bowl that way. I don't think so, because as long as you bowl at your natural pace it is fine. If you are looking for a role model why would you not look at the best in the world? Warne had the five basics of spin: he was side-on; to get side-on, your back foot needs to be parallel to the crease and Warne's was; his front arm started weakly but by the time of release it grew very powerful; he drove his shoulders up and over when he released the ball; and completed his action by rotating 180 degrees. Those basics came naturally to him and were the key to him walking up to the crease and jumping to bowl.

Who do you think is currently the best spinner in the world? asked Yazad from India

Going by current performances, Swann is tough to ignore. He is getting important wickets and helping England win Test matches. I think he has every reason to believe, as he does, he should be very highly rated. I like Danish Kaneria, who probably is the best wrist spinner in the world.

Why has Australia not produced a decent spinner since Warne? Do you think Hauritz, Krejza, etc. have not been given the long rope that Warne got in his early days? asked Vijay from Singapore

People forget that Warne was thrown into the deep end and at one stage had 1 for 228 and his career could have been terminated very early. But faith, patience and others' the belief in his ability helped Shane recoup, along with the enormous talent he had. Before him, we had a lot of guys who were average-to-good legspin bowlers. Probably before Warne, Clarie Grimmett was the best legspinner. Richie Benaud was outstanding and consistent but did not spin big. Warne is an once-in-a-lifetime bowler. When he first played, he did not know how to defend himself. As he got better, he learned how to defend himself. That is how you become a great bowler.

Krejza is still in the mix, and at the moment they are pushing for New South Wales' Steven Smith but he is just a baby. Hauritz has shut the door on the others because he has improved steadily in the last 12 months. He has made improvements to his bowling action, is getting spin and drift and is very much a Test-match bowler.

Are there any other spin options on the horizon for Australia? asked Allan Pinchen from Australia

One of the difficulties in developing young spinners is the Under-19 competition. Every two years there is an U-19 World Cup. The limited-overs format is not about spin but about containment. When Warne came through the system, they played four-day games. During his formative years he toured England, West Indies and Zimbabwe, bowling in four-day matches. Brad Hogg on the other hand was a ten-over bowler. Between the two World Cups (2003 and 2007) I have no doubt Hogg was the best spinner. But when given the opportunity in the Test side, 10 overs were not good enough. You have to be able to bowl at least 20-25 overs.

Do you think in Twenty20 spinners are at a disadvantage since the ball is always relatively new and hence they don't get enough spin off the pitch? asked Ashish from the USA

Twenty20 is not about spin, even if they say it is. It is really about slow bowling. I watch fast bowlers bowl six slow balls an over. It is about taking the pace off the ball and the same applies to spinners. I watched Harbhajan Singh help India win the 2007 World Cup in South Africa and he was bowling 100kph yorkers wide off the crease. You wonder about the development of the spinner then. I don't think he has been the same bowler since.

With the growing emphasis on the shorter forms of the game, how can any country develop a quality wicket-taking slow bowler? asked John Westover from Australia

That is a great question. In my view we should find ways of getting those young, developing spinners to play longer forms of cricket where they can bowl sustained spells. There are two ways to develop as a spinner: by going to the nets and working on your craft and bowling at targets. Or by experimenting and bowling in matches where you can try the things you tried in the nets. In limited-overs games everyone applauds a dot ball but not the batsman's strokes. To develop as a spinner in the four-day game you have to invite the batsman to play strokes. If the mental approach of all concerned - the coach, captain and team-mates - is to keep it tight, the spinner struggles to develop. We say big bats and short boundaries have created difficulties for a spin bowler but dot-ball cricket has done more damage.
